Fritter Ingredients
  • 1 medium zucchini, grated Grate the whole zucchini
  • 0.5 tsp salt
  • 1 zest of 1 lemon
  • 1/4 cup parsley, chopped A handful
  • pepper, to taste
  • 1/2 cup flour Use spoon method to measure
  • oil for frying Use neutral oil with medium-high smoke point
Goat Cheese Sauce Ingredients
  • 100 grams goat cheese
  • 2/3 cup plain yogurt Low-fat works, but sauce will be thinner.
  • salt, to taste
  • pepper, to taste
  • chives, to taste Adjust as desired.

Method
 

Preparation
  1. Grate the zucchini into a bowl.
  2. Mix in 1/2 tsp salt and let sit for 10 minutes.
  3. Squeeze out excess liquid from the zucchini using a cloth or your hands.
  4. Place the zucchini back in the bowl and add lemon zest, parsley, chives, egg, pepper, and flour.
  5. Stir until the mixture holds together.
Cooking
  1. Heat oil in a pan over medium heat.
  2. Spoon the batter into the pan and flatten into small patties.
  3. Fry for 2–3 minutes per side until golden brown.
  4. Drain fritters on paper towels.
Sauce Preparation
  1. For the sauce, whisk goat cheese with plain yogurt until smooth.
  2. Season the sauce with salt, pepper, and chopped chives to taste.

Notes

Serve warm with goat cheese sauce for dipping. Store cooked fritters in an airtight container for up to 3 days; goat cheese sauce can be stored separately for up to 4 days. Use a clean towel to remove excess moisture from grated zucchini.
