Ingredients
  

Zucchini Spaghetti
  • 3 cups yellow and red cherry tomatoes
  • 2 zucchini, spiralized
  • 4 oz / 115 g whole wheat spaghetti (optional – see notes)
  • Parmesan for topping
Avocado Sauce
  • 1 avocado
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 cup fresh flat leaf parsley
  • 3-4 green onions (green parts)
  • 1 garlic clove
  • juice of 1 lemon
  • freshly ground black pepper, as needed

Method
 

Preparation
  1. Blend all avocado sauce ingredients together until smooth, then set the sauce aside.
  2. Cook the whole wheat spaghetti according to the package directions. Drain and reserve.
Cooking
  1. Add the cherry tomatoes to a large skillet over medium-high heat with a small drizzle of olive oil. Move the pan gently to keep the tomatoes shifting, and use a lid if needed to manage splattering. Cook until the skins split and the tomatoes develop a roasted appearance, then remove from the heat and set aside.
  2. Place the spiralized zucchini in the same skillet and toss for 1-2 minutes, until tender-crisp.
  3. Add the cooked spaghetti and avocado sauce to the skillet. Toss everything together until evenly coated.
  4. Season with salt and pepper, then finish with the reserved tomatoes and Parmesan if desired. Serve immediately.

Notes

For a lighter vegetable-focused version, the pasta can be skipped. Zucchini-only strands work well as a side dish, especially when paired with another meal component, but keeping the spaghetti makes the recipe feel more complete as a standalone meal.
