Farro
  • 1/2 cup uncooked farro
  • 1 1/2 cups vegetable or chicken broth
Beans and vegetables
  • 1 cup canned white beans, rinsed and drained
  • 1 cup halved grape tomatoes
  • 2 cups baby kale or spinach
  • 1/2 cup Asiago or Parmesan cheese
  • 1 cup tomato sauce
  • salt and pepper, to taste

Method
 

Cooking
  1. Add the farro and broth to a rice cooker and start the cooking cycle, or cook them in a small pan on the stove according to the package directions until the farro is soft and chewy.
