  • 3 shallots, finely minced or sliced
  • 1/4 cup bourbon
  • 1/4 cup rice vinegar
  • 1/4 cup red wine
  • 3 cups red or purple grapes, halved
  • 1 cinnamon stick
  • 1 bay leaf

Method
 

Preparation
  1. Heat the olive oil over medium heat. Add the shallots and cook, stirring occasionally, for 5-10 minutes until softened and fragrant.
Cooking
  1. Increase the heat and add the grapes. Pour in the bourbon, rice vinegar, and red wine, allowing the mixture to sizzle and loosen any browned bits from the pan.
  2. Add the cinnamon stick and bay leaf. Simmer the mixture, stirring occasionally, for about 30 minutes until the grapes begin to break down.
Finishing
  1. Press the softened grapes with the back of a wooden spoon until the chutney reaches a jam-like consistency.
  2. Remove from heat, cool, and serve with crackers and cheese.
