Sesame Noodle Bowls with Creamy Sesame Sauce and Chicken

Ingredients
  

Sauce
  • 1/4 cup sesame paste (or tahini)
  • 1/4 cup warm water
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, grated
  • Sriracha and sugar, to taste
Noodle Bowls
  • 6-8 oz / 225 g stir fry noodles, Chinese egg noodles, or linguine
  • 2 cups edamame, cooked
  • 2 cucumbers, diced
  • 1 lb. chicken breast, cooked and diced (optional: see notes)
  • Sesame seeds

Method
 

Preparation
  1. Combine the sauce ingredients in a bowl and whisk until smooth, or blend them together using a food processor or sealed jar.
  2. Cook the noodles a few minutes less than the package directions. If the noodles become very sticky, rinse them with cold water.
  3. Coat the cooked noodles with about half of the prepared sesame sauce.
Assembly
  1. Portion the noodles, edamame, cucumber, and chicken into containers.
  2. Add a small amount of the remaining sauce over each portion and finish with sesame seeds.

Notes

For the ideal chicken method, cut chicken breasts into bite-sized pieces, coat with olive oil, salt, pepper, and garlic powder, then bake at 425°F (218°C) for 15 minutes. For a browned exterior, transfer the baked chicken to a skillet with extra sesame sauce and cook until the outside develops color.
